Step 1

Prepare the caramel syrup. In a small pot, combine the granulated sugar, light corn syrup, ¼ cup water, and salt. Stir to combine.

Over medium-high heat, cook undisturbed until the sugar reaches an amber color, about 10 minutes.

Remove the pot from heat and stir in the remaining ½ cup of water. Stir in the vanilla extract. Let the mixture cool before storing in the refrigerator.

Notes:

  1. Corn syrup helps prevent crystallization and create a smooth caramel syrup. If avoiding corn syrup, golden syrup or honey can be used. The flavor will be a little different if substituted.
  2. Whole milk is traditionally used but any milk of choice can be substituted.
