Prepare the apple cider syrup. In a small saucepan, combine the apple cider, dark brown sugar, filtered water, diced Granny Smith apple, diced Honeycrisp apple, ground cinnamon and ground nutmeg.
Bring the mixture to a boil and then reduce the heat to a simmer. Simmer until the apples are tender, about 15 minutes.
Let the mixture steep for about 15 minutes before using a fine mesh strainer to strain the syrup. Press the apples with a spatula to release all of the juices. Place the syrup in an airtight container and refrigerate until cold.
Assemble the apple crisp macchiato. In a tall glass, add the apple syrup and fill it with ice. Add the milk and top with the espresso shots.
Drizzle caramel sauce on top and finish off with a dusting of ground cinnamon. Stir, sip and enjoy!
