cooked quinoa

black beans
1/4 cup(s)
arrowroot flour

oil
2 tsp
salt

pepper
1/2 tsp
garlic powder

chopped cilantro

batch of chipotle aioli, see below
For the Chipotle Aioli
1 cup(s)
mayonnaise
1-2 tblsp
canned chipotle peppers (see notes)

cloves of garlic
1 tblsp
chopped cilantro
1 tsp
paprika
1/2 tsp
salt

Step 1

Make the quinoa burger patties. In a large bowl, combine onion, quinoa, beans, arrowroot flour, oil, salt, pepper, garlic powder and cilantro.

Mash all the ingredients together by hand. The black beans should become pasty.

Form sliders into three-ounce portions.

On medium heat, pan-fry or grill your patties 4-6 minutes on each side until caramelized and golden brown. Set aside.

In either a food processor or a blender, mix the mayonnaise, chipotle peppers, garlic, cilantro, black pepper, cumin, paprika and salt until aioli reaches a smooth consistency. Set aside.

Serve each quinoa burger over crisp lettuce, topped with chipotle aioli and avocado. Enjoy!

Notes:

The heat of the chipotle aioli can be adjusted by the amount of the canned chipotle peppers you use.
