Make the tartar sauce. In a bowl, whisk together the mayonnaise, pickles, vinegar, capers, lemon juice, mustard, salt and pepper. Mix thoroughly. Cover and refrigerate.
Make the shrimp burger patties. In the bowl of a food processor, pulse bread into breadcrumbs. Remove breadcrumbs into a bowl. Add ¾ lb of the shrimp, egg, lemon juice, shallot, garlic and freshly ground black pepper into the food processor. Pulse until shrimp are finely chopped, nearly paste-like.
Add the shrimp mixture to the breadcrumbs. Chop the remaining ¼ lb of the shrimp into small pieces. Add to the breadcrumbs. Add the parsley to the breadcrumbs and mix until combined.
Divide the mixture into four equal portions and form them into a burger shape.
In a large nonstick skillet over medium heat, heat the oil until it begins to shimmer. Cook the shrimp patties for 3-4 minutes on each side, or until golden and cooked through. Set aside.
Add crisp lettuce on the bottom half of each bun. Top the lettuce with a shrimp burger patty. Top the shrimp burgers with tartar sauce. Serve burgers with a side of fries or kettle-cooked chips. Enjoy!
