Pat the shrimp dry with paper towels. In a shallow bowl, place the flour.
In a second shallow bowl, whisk together the eggs, milk and 2 teaspoons of Cajun seasoning.
In a third shallow bowl, whisk together the breadcrumbs and the remaining 2 teaspoons of Cajun seasoning.
Heat the canola or vegetable oil in a heavy-bottomed pot over medium-high heat to 350°F. Line a baking sheet with paper towels. Add the shrimp to the flour and shake off the excess.
Transfer the flour-coated shrimp to the egg mixture and coat thoroughly.
Let the excess egg mixture drip off before transferring the shrimp to the seasoned breadcrumbs. Toss to coat thoroughly.
Fry the shrimp until golden brown, about 2-4 minutes. Drain and place on the prepared baking sheet.
Serve warm with your favorite dipping sauce. Enjoy!
Notes:
- If small shrimp are not available, you may peel, devein and chop extra-large shrimp into bite-sized pieces.
