Preheat the oven at 425°F. Prepare a 9x12-inch pan with cooking spray. In a pan over medium heat, brown the sausage. Combine the sliced mushrooms, pepperoni and diced tomatoes into the pan. Cook until heated through.
Stir in the Italian seasoning and olive oil. Pour into prepared baking dish.
Top with mozzarella and Parmesan.
Bake at 425°F for 20 minutes until cheese is bubbling and melted.
Serve the keto pizza casserole hot with a side salad. Enjoy!
