Measure and prep all ingredients.
In the bowl of a food processor, add the chopped onion, green bell pepper, jalapeño, garlic clove, cilantro and parsley.
Pulse until all the ingredients are finely chopped.
Add the avocados, lime juice, vinegar, olive oil, one tablespoon of water, salt and pepper. Blend until smooth. If the gusacaca is too thick, add more water. Adjust seasoning with salt and pepper, to taste.
Serve alongside tortillas, taquenos or as a sauce to steak or chicken. Enjoy!
