Step 1

Gather all ingredients and preheat a pan or cast iron griddle over medium heat.

In a large bowl, whisk together flour, sugar and baking powder until combined. Make a well in the center and add eggs, milk, butter and vanilla. Whisk until combined but do not over-mix.

Let the batter rest for 5 minutes and then pour it into a squeeze bottle.

Lightly grease the skillet and make the bunny shapes. You will need a large shape for the bunny body, a smaller one for the head, two small shapes for the ears and two small shapes for the feet. You should need roughly 2 tablespoons for the body (round shape), 1 1/2 tablespoons for the head (round shape), 2 teaspoons for the ears (oval shape) and 2 teaspoons for the feet (round shape). Cook the pancakes until golden brown, about 1-2 minutes per side.

Arrange the pancakes on a large plate into the bunny shape. Add a banana round for each foot and three chocolate chips. Add the marshmallow half for the tail and decorate with shredded coconut.

Serve with maple syrup, if desired. Enjoy!

Notes:

  • Pancake batter should be easily pourable but not too runny. If your batter is too runny, add a little flour until it thickens. If your pancake batter is too thick, add milk a tablespoon at a time until the right consistency is achieved.
