flaxseed meal

rice flour or organic gluten-free pancake mix
1 tblsp
chia seeds
1/2 tsp
ground cinnamon, optional
chopped pecans, optional
organic sugar-free syrup, for topping

Step 1

Measure and prep all ingredients.

In the jar of a blender, add the oatmeal, egg or flax egg, oat milk, bananas, flaxseed meal, rice flour, chia seeds and cinnamon, if using.

Blend together until the mixture is similar to a thick smoothie. Let the batter rest for 10 minutes. (See notes.)

In a large griddle or a pan over medium-low heat, grease the pan with nonstick spray. Ladle ½ cup of batter for each pancake. Let the pancakes cook, undisturbed, until the sides are dry. (See notes.)

Flip the pancakes to finish cooking. The pancakes are done when the bottoms are golden brown and the insides are set.

Drizzle the pancakes with organic sugar-free syrup or serve it plain.

Sprinkle with chopped pecans for an extra crunch. Enjoy!

Notes:

  • The mixture will be slimy.

  • Use very gentle heat or the pancakes will not cook well.

Awesome pancakes! I love how hearty and filling they. And the bananas add just enough sweetness, no sugar needed. Two thumbs up!
