low-sodium butter crackers, such as Ritz
2 tblsp
finely chopped fresh parsley, plus more for garnish
3 tblsp
unsalted butter, melted
1 tblsp
freshly squeezed lemon juice
1 tsp
hot sauce
1/2 tsp
garlic powder
1/4 tsp
smoked paprika
avocado or olive oil, as needed

salt and pepper, to taste
lemon wedges, to serve

Step 1

Preheat oven to 375°F. Measure and prep all ingredients.

Crush the low-sodium crackers into medium crumbs in their sleeve or in a plastic zip-top bag.

In a mixing bowl, combine the crushed crackers, chopped fresh parsley, melted butter, lemon juice, hot sauce, garlic powder and smoked paprika. Stir until well combined.

Lightly coat a small baking dish with avocado or olive oil. Place a light layer of the cracker crumb mixture in the bottom of the baking dish.

Season the haddock filets lightly with salt and pepper. Place the haddock in the baking dish on top of the cracker crumb mixture.

Top the haddock with more of the cracker crumb mixture.

Transfer the baking dish into the oven and bake for 20-25 minutes, or until the fish is cooked through and is easily flaked with a fork. (See notes 1.)

Notes:

  1. If you are working with a thin haddock fillet, reduce the cooking time to around 15 minutes.

I didn't have haddock, but used mahi instead. Nom nom nom -a-licious!
