White Chocolate Truffle Recipe

This white chocolate truffle is reminiscent of an elegant and iconic Ferrero recipe. Delicate vanilla wafers, rich white chocolate and flaky coconut meld together with a crunchy almond center for a show-stopping Raffaello-like chocolate confection.

He began working in kitchens at age 16 and moved to Europe to explore different cuisines firsthand after graduating. He quickly landed at a culinary academy in Italy and graduated with honors. white chocolate
90 g
vanilla wafers, about 12 medium wafers
4 tblsp
coconut flakes

Directions 10 steps | 70 Minutes

Step 1

In a small pot over low heat, melt the white chocolate, about 2 minutes.

Step 2

In the jar of a blender or a food processor, add the vanilla wafers and pulverize the wafers into medium-fine crumbs.

Step 3

In a cold bowl, combine the melted white chocolate and the wafer crumbs. (See notes.)

Step 4

Transfer the mixture into the refrigerator and chill for at least 30 minutes. 

Step 5

Scoop one tablespoon of the white chocolate mixture into your hand and compact it together.

Step 6

Create a divot and place an almond in the center.

Step 7

Roll the white chocolate mixture in between your palms to create a spherical shape. If the white chocolate is too sticky, try moistening the palms of your hands before rolling. Repeat with the remaining white chocolate mixture.

Step 8

Dip the white chocolate sphere into the coconut flakes, rolling it back to a spherical shape if needed. Repeat with the remaining white chocolate truffles.

Step 9

Refrigerate the white chocolate truffles for at least 30 minutes before serving.

Notes:

  • The sweetness of your white chocolate truffle will depend on the sweetness of your chocolate and wafer.
  • The recipe can be customized with lots of different ingredients such as coffee powder, dark chocolate and pistachios.
