large garlic cloves, minced

medium carrots, peeled and diced

chicken or vegetable broth or stock

frozen peas
salt and pepper, to taste

Step 1

Measure and prep all ingredients.

In a skillet with a lid over medium heat, add the butter. Once the butter melts, add the shallots and cook until softened, about 3-4 minutes.

Add the minced garlic and cook until fragrant, less than 1 minute.

Add the diced carrots and the broth (or stock) to the skillet. Bring to a simmer and reduce the heat. Cover and cook until the carrots are softened, about 10 minutes. Start checking at 8 minutes to see if the carrots have softened.

Stir in the frozen peas. Cover and cook until the peas are cooked through, about 2 minutes. Season with salt and pepper.
