Peel the carrots and slice them diagonally into ¼ inch thick ovals.
In a large skillet over medium heat, melt the butter. Whisk the butter until it foams up and brown bits form, about 2 minutes.
Add the garlic and carrots and cook for 3 minutes.
Add the maple syrup and cook until the carrots are tender but still crisp. Season with salt and pepper to taste.
Top with pecans and parsley and serve warm. Enjoy!
