In a large mixing bowl, add the cabbage, carrots, celery and cucumber. Pour boiling water over vegetables and let sit covered for 20 minutes.
Strain off the water. Mix in cider vinegar, sugar olive oil and crushed red pepper.
Serve warm. Jamaican cabbage is a flavorful side to any meal.
