Measure and prep all ingredients. Wash and dry the cucumber.
Slice the cucumber lengthwise and remove the cucumber seeds with a spoon.
Grate the cucumber.
Transfer the grated cucumber to a cheesecloth or a paper towel and squeeze to remove as much moisture as possible.
Transfer the cucumber to a small mixing bowl. Mix the cucumber with Greek yogurt, pepper, cumin, paprika, sugar and salt.
Refrigerate the mixture for at least 1 hour or until cold.
Serve chilled as a dip with pita bread, crackers and sliced vegetables. Enjoy!
