paprika
1/2 tsp
dried oregano
salt and pepper, to taste

Step 1

In a skillet over medium heat, fry the sausage until the fat is rendered.

Add the bell peppers and onions and cook until it starts to soften, about 2 minutes.

Stir in the paprika, oregano, salt and pepper.

Add the shredded potatoes and cook, stirring occasionally, until browned, about 5 minutes.

Make 2 wells in the potato mixture.

Crack an egg into each well.

Turn the heat to low. Cover the skillet and cook for 5-7 minutes.

Sprinkle the cheddar cheese on top and place the lid back on. Cook for another 2 minutes.

Notes:

  • Frozen shredded hash brown potatoes work well in this recipe.
  • If using shredded fresh potatoes, be sure to squeeze out the excess moisture before using it in the recipe.
