vegetable oil

garlic cloves, minced

chicken breast, thinly cut into small bite-sized pieces

onion, thinly sliced

tomato, cut into chunks

Thai sweet basil leaves

green onions, cut into 1-inch long pieces

cilantro, roughly chopped

white pepper powder
For the Seasoning Sauce

light soy sauce
1 tblsp
seasoning soy sauce
1 tblsp
fish sauce
1 tsp
sugar
2 tblsp
roasted chilli paste (nam prik pao)

Directions 8 steps | 60 Minutes

Step 1

Make the seasoning sauce. In a bowl, whisk together the light soy sauce, seasoning soy sauce, fish sauce, sugar and roasted chili paste. Set aside.

In a skillet on medium-high heat, heat the oil.  When oil is hot, stir fry the minced garlic until fragrant.

Add the chicken and stir fry until the chicken is cooked.

Add onion and Thai peppers. Stir in the seasoning sauce.

Add cooked rice to the skillet and stir carefully to avoid breaking the rice.

Push the skillet ingredients to one side. In the space created, add one egg and then fold some rice into it. Repeat the process with the second egg on another side.  Let it sit for 30 seconds and then mix thoroughly.

Add the tomato, sweet peppers, basil leaves, cilantro and green onion. Stir well. Remove from heat.

Garnish with cilantro leaves and white pepper powder. Enjoy!

YUM. This had a ton of flavor. We had it as our main meal one Saturday night, but I think it would be just as good as a side dish.
