Moo ping, also known as Thai pork skewers, is a popular street food in Thailand. This recipe features flavor-packed ground pork which is skewered, then grilled to golden brown perfection and served with sweet chili sauce.

ground pork, see notes

garlic cloves, minced

cilantro, finely chopped
1/2 tsp
sugar
1 tblsp
soy sauce
sea or kosher salt and freshly ground black pepper to taste
1 tblsp
grated fresh ginger

lemongrass stalks, trimmed and slightly bruised with a meat tenderizer or the handle of your knife, see notes
sweet chili sauce, to serve

Directions 5 steps | 35 Minutes

Step 1

In a large bowl, combine the ground pork, crushed garlic, chopped cilantro, sugar and soy sauce. Season with salt and pepper and mix well.

Step 2

Divide the pork into eight portions. Dampen your hands with water (to prevent sticking) and mold each portion into a ball.

Step 3

Preheat the grill, stovetop grill pan or broiler. Stick a length of lemongrass or skewer halfway into each ball. Press the meat mixture around the lemongrass to make an elongated meatball shape.

Step 4

Cook the moo ping on a hot grill, stovetop grill pan or under the broiler for 3-4 minutes on each side or until cooked through.

Step 5

Serve with the chili sauce for dipping. Enjoy!


Notes:

Variations:

  • You can use ground beef, ground turkey or a combination of both.
  • Use bamboo skewers instead of lemongrass.
  • Serve as a meal with steamed jasmine rice.

Do Ahead:

  • The ground pork mixture can be made 5 days ahead and refrigerated.
