Roma tomato, cut into chunks

Thai peppers, thinly sliced, crosswise

For the Seasoning Sauce

fish sauce, see notes 1

Step 1

Make the seasoning sauce. In a bowl, whisk together the fish sauce, lime juice, sugar and roasted chili paste. Set aside.

Sprinkle a pinch of salt and black pepper over the steak on both sides. Heat a cast-iron or grill pan and grill the steak on the rare side of medium-rare.

Cut into bite-sized pieces. Set aside.

In a large bowl, combine the grilled beef with the seasoning sauce.

Add the shallots, green onions, onion, cucumber, tomato, Thai peppers, chili powder (if using), fresh mint and lettuce leaves.
