Prepare the chicken. Trim any excess fat off of the chicken. Cut the chicken into ½-inch dice.
Transfer the chicken to a bowl and lightly drizzle the oil over the chicken and season with salt and pepper. Toss to coat and set aside.
Prepare the pineapple. Peel and core the pineapple.
Cut the pineapple into ½-inch dice.
Alternate and thread the chicken and pineapple on skewers. (See notes.)
Preheat the grill to medium-high heat and brush the grill with high-heat oil. Grill skewers on all sides until cooked with fairly dark grill marks.
Place the skewers on a plate or board and lightly sprinkle the chicken and the pineapple with li hing mui powder. Either hold warm in 250°F oven or plate and serve. Enjoy!
Notes:
- Li hing mui powder can be substituted with Tajin, but they are not similar in taste.
- If using wooden skewers, soak skewers in water for at least 30 minutes to prevent burning.
