Ingredients

Servings:
4
4
skinless boneless chicken breasts and/or thighs
1
pineapple
2 tsp
canola, vegetable or other high-heat oil
1 tblsp
salt or to taste
1 tblsp
pepper or to taste
4 tsp
li hing mui powder, see notes

Directions 7 steps | 30 Minutes

Step 1

Prepare the chicken. Trim any excess fat off of the chicken. Cut the chicken into ½-inch dice.

Step 2

Transfer the chicken to a bowl and lightly drizzle the oil over the chicken and season with salt and pepper. Toss to coat and set aside.

Step 3

Prepare the pineapple. Peel and core the pineapple.

Step 4

Cut the pineapple into ½-inch dice.

Step 5

Alternate and thread the chicken and pineapple on skewers. (See notes.)

Step 6

Preheat the grill to medium-high heat and brush the grill with high-heat oil. Grill skewers on all sides until cooked with fairly dark grill marks.

Step 7

Place the skewers on a plate or board and lightly sprinkle the chicken and the pineapple with li hing mui powder. Either hold warm in 250°F oven or plate and serve. Enjoy!

Notes:

  • Li hing mui powder can be substituted with Tajin, but they are not similar in taste.
  • If using wooden skewers, soak skewers in water for at least 30 minutes to prevent burning.
