Heat butter in a non-stick pan or wok. Add shrimp and garlic. Sauté until aromatic.
Add bell peppers and carrots. Sauté for 1-2 minutes.
Push contents of the pan to one side. Add in the eggs and stir until cooked.
Toss in the rice and soy sauce until evenly combined and heated through.
Garnish with the chopped green onions and serve hot. Enjoy!

15 minutes is all it takes to make this crazy good fried rice and it's even better leftover (if it lasts that long). I love that the ingredient list is simple and it is super easy to sub chicken for the shrimp or even leave out the protein altogether for a vegetarian dish.Reply to this comment
