uncooked long-grain white rice, rinsed
7 cup(s)
chicken or vegetable stock
1/2 tsp
kosher or sea salt, plus more for seasoning
1 tsp
thinly sliced fresh ginger
1 tblsp
sesame seed oil and/or soy sauce
1 tblsp
sliced green onion, for garnish

Step 1

In a large pot add the rinsed rice, chicken (or vegetable) stock, salt and ginger.

Bring the mixture to a boil, then reduce the heat to a low simmer. Stir occasionally to avoid the rice clumping or sticking at the bottom.

Simmer the rice porridge for about 1 hour or until the congee is thickened and creamy. Season with salt to taste.

Serve the rice porridge hot, topped with sesame seed oil and/or soy sauce. Garnish with sliced green onion. Enjoy!

Notes:

  1. As the rice porridge cools, it will become thicker. Add additional stock or water if necessary to thin the rice porridge to your desired thickness.
