Measure and prep all ingredients.
Bring a pot of water to a boil. Boil the fingerling potatoes for about 30 minutes, until tender.
Remove the potatoes and smash each fingerling potato.
Once all of the potatoes are smashed, fry the potatoes until dark golden brown.
Drain the deep-fried potatoes on a paper towel. Transfer the fried fingerling potatoes and lemon zest to a bowl. Toss until evenly distributed.
Add the minced rosemary to the bowl and toss until evenly distributed. Sprinkle the salt. Toss until thoroughly combined.
Serve immediately. Enjoy!
