Slice the potatoes into ⅜-inch thick rounds.
Place the potatoes in a large pot and fill the pot with water and a tablespoon of salt. Bring the water to a boil. Once the water reaches a boil, reduce the heat to a simmer. Simmer the potatoes for about 5 minutes or until slightly transparent around the edges but still firm in the center.
Drain the potatoes and rinse them with cool water. Pat the potatoes dry with paper towels or a kitchen towel until completely dry.
Make the dressing. In a bowl, whisk together the mayonnaise, chives, lemon juice and granulated garlic until well combined.
Toss the potatoes with the dressing and set them aside.
Preheat the grill to medium-high heat. Place the potato slices directly on the grill and grill for 2-3 minutes on each side or until grill marks appear and the potatoes are crisp on the outside.
Plate and garnish with more chives. Serve and enjoy!
