These deep fried potatoes, also known as sindhi tuk aloo, are beyond the ordinary fried potatoes. Boiled potatoes are smashed and fried for maximum textural contrast: fluffy on the inside and crispy on the outside.

baby potatoes
200 ml
vegetable oil
1 1/2 tsp
salt
1 tsp
red chili powder
1 tsp
amchur (dried mango powder), optional

Step 1

Place the potatoes in a pot and fill with enough water to cover the potatoes.

Bring the water to a boil and boil the potatoes until tender.

Drain the potatoes and smash each potato with a spatula, until flattened.

Place the oil in a stockpot and heat the oil until hot. Fry the potatoes on each side until golden and crispy. (See notes 1.)

Drain the deep fried potatoes on a paper towel lined plate and season with salt, red chili powder and amchur (if using) while still hot.

Notes:

  1. For extra crispy deep fried potatoes, drain the potatoes and fry them a second time.
