Make the crunchy coleslaw. In a large bowl, add the shredded cabbage, shredded carrot, thinly sliced red onion, thinly sliced jalapeño, mayonnaise, one tablespoon apple cider vinegar, sugar and salt.
Toss until evenly combined. Taste and adjust seasoning with more vinegar, if desired.
Place a generous mound of pulled pork on the bottom half of the slider buns.
Top with the crunchy coleslaw. Top with hot sauce or barbecue sauce, if desired.
