Preheat the oven to 375°F. Grease a baking dish or sheet pan. Measure and prep all ingredients.
Remove the stems from the mushrooms and finely chop the stems. Set aside.
In a large skillet over medium heat, add the olive oil, mushroom stems and Italian sausage. Cook until sausage is browned and cooked through.
Add the garlic and spinach and cook until the spinach is wilted. Remove from heat and set aside.
In a large mixing bowl, mix the cream cheese and the sausage mixture. Season with salt and pepper to taste.
Fill each mushroom cap with the sausage mixture and sprinkle the Parmesan cheese on top of the prepared stuffed mushrooms.
Bake the mushrooms in a baking dish for about 15-20 minutes, until the mushrooms are fork-tender.
Garnish your mushrooms with parsley and serve hot. Enjoy!
