Honey Roasted Cashews Recipe

These honey roasted cashews are made with just five ingredients: Cashews, honey, lemon juice, lavender and a pinch of salt. Lavender gives this sweet and crunchy snack a lovely floral note that pairs wonderfully with honey.

lemon juice
1 tblsp
culinary lavender florets, plus additional for garnish

Step 1

Preheat the oven to 350°F. Measure and prep all ingredients.

In a small saucepan, combine honey, lemon juice, lavender florets and a pinch of salt. Cook on medium heat, stirring occasionally. At the sight of the first bubble, remove from heat. Cover and let sit for 10-15 minutes.

Strain the lavender florets from the honey liquid. Discard lavender florets.

In a small bowl, combine whole unsalted cashews with the honey liquid. Coat thoroughly. On a small parchment-lined baking sheet, spread honey coated cashews evenly.

Roast in the oven for 8 minutes, or until golden brown. Remove from the oven and season gently with salt.

Let the cashews cool. With a spatula, carefully remove the honey roasted cashews from the baking sheet and transfer to a plate.

Garnish the honey roasted cashews with additional lavender. Enjoy!

The images in this recipe are so beautiful that I just HAD to try the recipe out. And good news....the finished product is just as amazing as the images above. Such a unique flavor profile and a perfect way to "fancy up" some raw cashews. Will absolutely make this one again!
