Measure and prep all ingredients.
Make the crepe batter. In a bowl, whisk together flour, salt, unsweetened cocoa powder and sugar. Set aside.
In a blender, add the eggs, egg yolks, milk, water and vanilla extract. Blend until smooth.
Add the dry ingredients into the blender. Blend until smooth.
Slowly add the melted butter into the mixture and blend until smooth. Let the batter rest for 20 minutes.
Coat a nonstick pan with the nonstick spray and heat over medium heat. Pour a ¼ cup of crepe batter and swirl around to cover the pan. Let cook until the surface is set and the bottom is light brown.
Loosen with a spatula and flip over to cook the other slide. Once the bottom is set, slide the crepe onto a plate. Repeat with the remaining batter. Let cool.
Fold the crepes into fourths or in a roll.
Serve plain, dusted with confectioners’ sugar or filled with fresh fruit or vanilla ice cream. Enjoy!
