Prep and measure all ingredients for the chickpea cookie dough.
Add all ingredients, except dairy-free white chocolate and blueberries, into a food processor.
Process a few minutes until the dough is smooth, thick and creamy. Scrape down the sides of the food processor as necessary.
Transfer the dough to a bowl and fold in the white chocolate pieces and blueberries.
Serve the dough immediately or refrigerate. Enjoy!
