cooked chickpeas
1/3 cup(s)
peanut butter
1/4 cup(s)
grated coconut
1 tsp
vanilla extract

1/4 cup(s)
dairy-free white chocolate, chopped
1/4 cup(s)
blueberries

Directions 5 steps | 5 Minutes

Step 1

Prep and measure all ingredients for the chickpea cookie dough.

Step 2

Add all ingredients, except dairy-free white chocolate and blueberries, into a food processor.

Step 3

Process a few minutes until the dough is smooth, thick and creamy. Scrape down the sides of the food processor as necessary.

Step 4

Transfer the dough to a bowl and fold in the white chocolate pieces and blueberries.

Step 5

Serve the dough immediately or refrigerate. Enjoy!


Notes:

  • You can substitute white chocolate and blueberries for your favorite filling, such as fresh chopped strawberries or cookies for extra crunch. 
  • This cookie dough is created to be eaten raw and is not suitable for baking.

I had a similar recipe for this but it was way too much sugar to be healthy. This is a much better version
