Wash, dry and slice the zucchini into French fry sticks, about ½-inch thick and 4-inches long.
In a shallow bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt and pepper.
In a second shallow bowl, whisk eggs together until homogenous.
Toss the zucchini in the flour mixture, shaking off the excess.
Dip the flour coated zucchini in the egg mixture, drip off any excess.
Toss the egg coated zucchini to the panko mixture, covering it thoroughly. Set aside and repeat with the remaining zucchini.
Spray the inside of the air fryer basket with cooking spray and arrange the zucchini fries in a single layer, leaving a little space between each fry. Air fry the zucchini at 400°F until golden brown and crispy, between 8-10 minutes. Repeat with the remaining zucchini.
Serve warm alone or with a dipping sauce of your choice. Enjoy!
