Wash and dry your zucchini. Using a mandolin, slice the zucchini into even ⅛-inch thick rounds.
Lay the zucchini slices on top of paper towels and sprinkle with kosher salt.
Let the zucchini sit for 10 minutes. Pat the slices dry with paper towels. The drier the slices, the crispier the chips will be.
In a medium bowl, toss the zucchini, garlic powder, oil and pepper together.
Spray the inside of the air fryer basket with cooking spray and arrange the zucchini slices in a single layer, leaving a little space between each chip. Air fry the zucchini at 400°F for 8 minutes and flip over. Fry for 8-10 minutes or until golden brown and crispy. Repeat with the remaining zucchini.
Serve alone or with a dipping sauce of your choice. Enjoy!
