Totchos, also known as tater tot nachos, are a fun variation of the traditional nachos. Crispy-edged tater tots are loaded with spicy chorizo, black beans, fresh vegetables and cheese but can be customized to various toppings.

32 oz. bag of frozen tater tots
3/4 lb
fresh chorizo, casings removed, see notes 1

sweet onion, diced

garlic cloves, minced

15 oz. canned black beans, rinsed and drained
1 tsp
smoked paprika
salt and pepper, to taste
10 oz
shredded Monterey or pepper jack cheese

chopped green onions

Roma tomato, seeds removed and finely diced

avocado, peeled, pitted and finely diced
1/4 cup(s)
pickled jalapeños
1/4 cup(s)
finely chopped cilantro
sour cream, to serve
lime wedges, to serve

Step 1

Preheat the oven to 425°F. Place the tater tots on a single layer on a baking sheet. Bake the tater tots according to the package’s directions until crispy and golden brown.

While the tater tots are baking, prepare the chorizo. In a skillet over medium heat, add the chorizo and cook, breaking it apart with a wooden spoon, until no longer pink.

Add the diced onions to the skillet and cook until softened, about 4 minutes.

Add the minced garlic and cook until fragrant, less than 1 minute.

Add the rinsed and drained beans, smoked paprika, salt and pepper to the skillet. Stirring until well combined and warmed through. Turn off the heat and set it aside.

Bake the totchos. Lower the heat to 400°F. Remove the tater tots from the oven and evenly spread the chorizo bean mixture.

Sprinkle the shredded cheese over the chorizo bean mixture. Bake until the cheese is melted, about 10 minutes.

Assemble the totchos. Evenly spread chopped green onions, diced tomatoes, diced avocados, pickled jalapeños, cilantro and dollops of sour cream. Serve with lime wedges and enjoy!

Notes:

  1. Totchos are perfect for any type of leftover taco meat.
