can of red kidney beans or other bean variety, if preferred

can of pinto refried beans

spinach leaves, chopped

sharp cheddar cheese, grated

jar of medium or hot salsa
12 oz
jar of jalapeño pepper slices
1/2 cup(s)
sour cream or crema

lime, juiced

lime sliced into wedges

bunch of cilantro, chopped
hot sauce, to taste

Step 1

Preheat the oven to 350°F. Line a sheet pan with parchment paper. Spread the tortilla chips over the sheet pan.

In a small bowl, combine the kidney beans and the refried beans. Mix thoroughly.

Use a spoon to spread the bean mixture over the chips.

Sprinkle the spinach leaves over the layer of the bean mixture.

Layer the shredded cheese over the spinach.

Top the spinach with the salsa.

Finally, top with the jalapeños.  Give the pan a little shake so the ingredients sink down through the layers of chips.

Bake at 350°F until the cheese melts and starts to bubble. Remove the baking sheet from the oven and top the nachos off with spoonfuls of sour cream, lime juice, lime wedges and a sprinkle of cilantro.

Shake hot sauce over the nachos to taste. Serve hot. Enjoy!

How have I never thought of this?! I used bacon bits instead of beans and this was perfect
