Sheet pan pancakes are a great way to serve breakfast for a gathering. With an endless combination of toppings, it can easily can be customized to any crowd's favorites.

3 tblsp
granulated sugar
1 tsp
baking powder
1/2 tsp
baking soda
3/4 tsp
salt

large eggs

reduced fat buttermilk
6 tblsp
unsalted butter, melted and slightly cooled
2 tsp
pure vanilla extract
chocolate chips, for topping
sliced strawberries, for topping
blueberries, for topping
bananas, for topping
raspberries, for topping
white chocolate chips, for topping
maple syrup, for serving

Directions 6 steps | 25 Minutes

Step 1

Preheat the oven to 425°F. Thoroughly grease a sheet pan with nonstick spray. Mix the dry ingredients. In a bowl, whisk together the flour, sugar, baking powder, baking soda and salt. 

Step 2

Mix the wet ingredients. In a separate bowl, whisk together the eggs, buttermilk, melted butter and vanilla extract until well combined. 

Step 3

Add the wet ingredients to the dry ingredients and combine with a silicone spatula just until combined. You may see lumps but that is okay.

Step 4

Pour the pancake batter into the prepared sheet pan. 

Step 5

Top the first third with chocolate chips and strawberries. The second third with blueberries and bananas and the final third with raspberries and white chocolate chips. (See notes 1.)

Step 6

Bake for 14-16 minutes or until a toothpick inserted in the center of the cake comes out clean. Slice and serve with a side of maple syrup. Enjoy!


Notes:

  1. Any combination of toppings can be used here including Nutella, peanut butter and coconut flakes.

Love this recipe! It's a great way to feed a crowd brunch but also make it customizable, quicker. Some folks want banana, chocolate chip, and blueberry pancakes? No problem!

For someone whose traditional pancakes usually flop, this is a mess-free alternative that lets the chef spend more time with company than in front of the skillet. Will definitely use this for brunch parties!
