parsley, roughly chopped

cilantro, roughly chopped

bunch radish greens, rinsed and roughly chopped, see notes 2

garlic cloves, roughly chopped
1/4 cup(s)
onion, roughly chopped
1/2 cup(s)
red bell pepper, seeded and roughly chopped
1 tblsp
dried oregano
1/4 tsp
red pepper flakes

pinch of cayenne pepper
1 tsp
kosher salt, see notes 3
1/2 tsp
ground black pepper

red wine vinegar
1/2 cup(s)
extra-virgin olive oil

Directions 4 steps | 10 Minutes

Step 1

In the bowl of a food processor, place the parsley, cilantro, radish greens, and garlic.

Step 2

Process until finely chopped. 

Step 3

Add in onion, red bell pepper, dried oregano, red pepper flakes, kosher salt, black pepper, cayenne pepper, red wine vinegar and extra-virgin olive oil. Pulse several times. Adjust seasoning with salt, to taste. 

Step 4

Serve and enjoy! 


Notes:

  1. Red chimichurri is best paired with this juicy cowboy steak with pan-fried radish and bacon.
  2. If making cowboy steak with pan-fried radish and bacon, reserve the radish greens from that recipe to make this chimichurri.
  3. This recipe uses Diamond Crystal kosher salt. If using Morton’s adjust to ½ teaspoon. Different kosher salt brands have varied crystal sizes and may affect the salinity of the recipe, so adjust accordingly.
