In a large nonstick skillet, heat the olive oil. Add the onions and sweat until the onions are translucent.
Add the roasted garlic, sliced white button, shiitake and oyster mushrooms. Sauté gently for 2 minutes.
Deglaze the pan with the vegetable stock. Cook the mushrooms gently over low heat for 5 minutes.
Add sherry vinegar, basil and parsley. Season to taste with kosher salt and cracked white pepper.
Serve alongside grilled flat iron steak. Enjoy!
