clove garlic, peeled and halved

tomato passata or tomato purée

tomato paste

fresh basil leaves, plus more for garnish

freshly grated Parmesan cheese
salt, to taste

Step 1

Bring a large pot of water to a boil and prepare all ingredients.

Heat oil In a deep skillet and add the peeled and halved garlic clove. Cook for 2 minutes and add the tomato passata and tomato paste. Season with salt.

Cover and cook for 10 minutes over medium-low heat, stirring occasionally. After 10 minutes of simmering, remove the garlic and add basil leaves. Keep warm over low heat.

Meanwhile, cook the pasta to al dente according to package instructions in generously salted boiling water. Drain the penne and add it directly to the pan with the tomato sauce. Stir for a few minutes over medium heat to thoroughly combine the pasta and sauce.

Garnish with additional fresh basil and grated Parmesan cheese. Enjoy!

Notes:

  1. If you can not find tomato passata you can substitute it with a high-quality tomato purée or plain canned tomatoes that have been processed through a food mill.

This recipe is perfect for busy days. You can easily make this and wouldn't require a lot of ingredients yet it taste amazing.
