diced bell pepper

diced white onion

tomato paste

chicken stock
1 tsp
Cajun seasoning

shrimp, peeled and deveined
chopped spring onions, for garnish

Step 1

Set the Instant Pot to the sauté function and heat the olive oil.

Add the sausage and cook until the fat is rendered.

Add the chicken and cook until slightly browned.

Add the bell pepper, onion and celery. Cook, while stirring, for 2-3 minutes. Add the tomato paste and sauté for 1 minute.

Add the rice and stir until the grains are evenly coated in oil.

Stir in the stock, Cajun seasoning and salt. Place the shrimp on top.

Cook on manual high pressure for 5 minutes. Let the pressure release naturally for 5 minutes before releasing the pressure manually.

Will be making more of this Cajun favorite. The Instant Pot method just made it so easy to make.
