Measure and prep all ingredients.
Prepare the honey walnuts. In a skillet over medium heat, combine the walnut halves, granulated sugar, water and honey.
Cook until the walnuts darken and are completely coated, then put them to drain on a paper towel.
Prepare the shrimp. In a medium skillet, heat the canola oil. Prepare the shrimp by dredging each one through the cornstarch.
Fry six or seven shrimp at a time in the hot oil until light golden brown. Drain them on paper towels.
Make the sauce by combining the mayonnaise, Sriracha sauce, soy sauce, white vinegar and salt.
While the shrimp is still hot, add the shrimp, honey walnuts, the sauce and water chestnuts into a bowl and toss together.
Serve hot, with cilantro on top, paired with brightly colored, steamed vegetables. Enjoy!
Notes:
- One 8 oz can of water chestnuts is equivalent to ¾ cup.
