In the pot of the Instant pot, place the broth, broccoli, carrots, onion and garlic. Set to cook on manual high pressure for 2 minutes.
When the cooking time ends, perform a quick pressure release.
Use an immersion blender to puree the vegetables.
Stir in the cheese. Season with salt and pepper to taste.
Serve immediately. Enjoy!

Mmmmm....this is my ultimate comfort food. Loved this recipe and definitely plan to make it again. I think I may try making a big batch and freezing in individual portions for future lunch servings!Reply to this comment
