Prepare the marinade. Thinly slice the ginger and garlic and place them in a bowl. Add the soy sauce, mirin, sake, brown sugar and sesame oil to the bowl and whisk to combine.
Place the mahi mahi fillets on a baking pan or a bowl and add 90% of the sauce. Reserve the remaining marinade. Cover and let sit for 20-30 minutes.
While the mahi mahi marinates, preheat the grill or a grill pan to medium heat. After the mahi mahi has marinated, place the fillets on the grill and cook for 2-3 minutes on each side, basting the fillets with the remaining sauce. Depending on the thickness of the fillets, you may have to cook them longer.
Serve with your favorite sauce, lemon wedges and fresh vegetables. Enjoy!
