Ingredients

Servings:
4
1 lb
dried pasta, such as penne or elbows, see notes 1
2 cup(s)
broccoli florets
1/2 cup(s)
grated Parmesan
1
lemon, zested
2 tblsp
unsalted butter
1/4 cup(s)
toasted pine nuts
salt and pepper to taste

Directions 5 steps | 25 Minutes

Step 1

Measure and prep all ingredients.

Step 8329 Shot
Step 2

Bring a pot of salted water to a boil. Cook the pasta according to the package’s instructions in boiling salted water.

Step 8330 Shot
Step 3

When the pasta is a couple of minutes away from being done, add the broccoli florets to the boiling water. Cook until the pasta is done, about 2 more minutes. The broccoli should be bright green and still crunchy. Reserve ½ cup of the pasta water and drain the pasta and broccoli.

Step 8334 Shot
Step 4

Take the pot off of the heat and stir in the Parmesan, lemon zest and butter. Season with salt and pepper.  If the sauce is too thick, add some of the reserved pasta water to create a silky sauce.

Step 8333 Shot
Step 5

When everything is evenly coated in the cheese and butter, place in a serving dish, sprinkle with the pine nuts and serve. Enjoy!

Step 8335 Shot

Notes:

  1. I've found thin pasta like spaghetti or fettuccine doesn't work as well. Try and procure bulky pasta shapes as they're better matched with the broccoli.
