fresh lemon juice

Measure and prep all ingredients.

Thoroughly rinse the blueberries if using fresh blueberries. In a small saucepan, add 1½ cups blueberries, granulated sugar, lemon juice, lemon zest and a pinch of salt.

Turn the heat to medium. Cook until the blueberries burst, release their juices and the mixture thickens, about 10 minutes. (See notes 3.)

Add the remaining ½ cup of blueberries to the compote and stir until well combined.

Notes:

  1. Fresh or frozen blueberries can be used. Wild blueberries are smaller and filled with extra blueberry flavor and are highly recommended.
  2. Like any fruit, the sweetness of blueberries varies. If you have extra sweet blueberries reduce the amount of sugar used. If your blueberries are extra sour, add more sugar.
  3. Frozen blueberries will take longer to reduce. 
  4. Chilled blueberry compote will be thicker.
