Blistered shishito peppers are a quick snack or an appetizer. Vibrant shishito peppers are charred and then paired with bright lemon and flaky salt for a briny kick.

shishito peppers, see notes 1
1 tblsp
avocado or grapeseed oil
fresh lemon wedges
flaky salt, such as Maldon

Step 1

In a bowl, combine the shishito peppers and the oil. Toss until evenly coated.

Heat a cast-iron pan over high heat for 5 minutes. Once the pan is very hot, add the shishito peppers.

Cook the shishito peppers until blistered, about 5 minutes. Be careful not to overcook or the shishito peppers will become mushy.

Remove the blistered shishito peppers onto a plate and squeeze 1-2 lemon wedges over the peppers. Season with flaky salt and enjoy!

Notes:

  1. Shishito peppers are generally mild but the spice level of each pepper varies. Take caution that there may be some spicy peppers.
