Preheat the oven to 400°F. Thinly slice the peeled and cored apples. Place the sliced apples into a bowl and toss with the sugar and lemon juice. Set aside.
On a lightly floured surface, lightly roll out the defrosted pastry dough.
Cut out 5-6 inch circles and place them on a sheet pan lined with parchment paper.
Use a paring knife to score a ½-inch border around each circle. Use a fork to dock the center of the circle. Arrange the apple slices in an overlapping concentric circle in the center. Place a few cubes of butter onto each apple tartlet. Sprinkle the turbinado sugar on the border of each tart.
Bake for 20-30 minutes until the apples are tender and the pastry is golden brown. Remove the tarts from the pan and heat the apple jelly until loose. Lightly brush each apple tart with the apple jelly.
Serve with vanilla ice cream. Enjoy!
