Rachel's green salad is a take on a salad that gained popularity when Jennifer Aniston mentioned a salad she enjoyed on the set of “Friends”. The older internet-famous salad recipe is a grain salad, but this version is based on her most recent interview where she described a version of a Cobb salad.*

Prepare the zesty Italian dressing. In a bowl or a large measuring cup, whisk together the red wine vinegar, Parmesan cheese, honey, dried basil, parsley, oregano, Worcestershire sauce, garlic powder, salt and pepper.

Slowly whisk in the extra virgin olive oil to create an emulsion. Set the dressing aside.

Cook the crispy turkey bacon or pork bacon. In a skillet, cook the bacon over medium-low heat until very crisp. Let the bacon cool and chop it into small pieces.

Cook the chicken breasts. Season the chicken breasts with garlic powder, salt and pepper.

In a skillet over medium heat, heat avocado (or olive) oil. Add the chicken and cook on each side for about 5-7 minutes until cooked through and the internal temperature reaches 165°F.

Let the chicken rest for 5-10 minutes before dicing the chicken into cubes.

Assemble the salad. In a large salad bowl, add the chopped iceberg lettuce. Add the chopped Roma tomatoes, chickpeas, chopped salami, diced chicken and top with the crispy turkey (or pork) bacon. Top with a generous grating of Pecorino cheese. Serve the salad either dressed or with the zesty Italian dressing on the side. Enjoy!
