Preheat the oven to 350°F. In a medium mixing bowl, mix together the flour, nutritional yeast, paprika, garlic powder, onion powder, mustard powder and black pepper.
Add the chopped jackfruit and quickly mix to incorporate the dry ingredients. (See Notes.)
Add the liquid smoke, vegan Worcestershire sauce, soy sauce and vegetable broth. Mix thoroughly.
Turn the mixture out onto a clean, dry surface and knead the mixture with your hands.
Form the mixture into a loaf shape and cut it into two equal parts, creating two flat rectangular loaves.
Heat up either a charcoal or stovetop grill and when hot, grill mark both sides of your jackfruit loaves. Let the marks get nice and dark, being careful not to burn them.
Coat the bottom of a 9x12-inch baking dish with ½ cup of BBQ sauce.
Place the grilled loaves in the sauce and flip to coat both sides.
Bake the loaves in the oven, uncovered, for 30 minutes.
Rest the jackfruit ribs for 10 minutes before cutting.
Baste with the remaining BBQ sauce and slice into 1-inch slabs.
Serve hot. Enjoy!
Notes:
The gluten activates very quickly. Work swiftly to ensure that all of the jackfruit pieces are incorporated into the loaf as it forms.
