garlic
1 tblsp
onion powder
1 tsp
chili powder
1 tsp
dried oregano or basil
salt and pepper, to taste

vegan egg mixture
1 tblsp
almond or coconut milk

Step 1

Preheat the oven to 330°F. In a large mixing bowl, mix plant-based meat with bell peppers and onions.

Mix in the panko crumbs, garlic, onion powder, chili powder, oregano, salt and pepper.

Stir in the egg and milk to keep the meatloaf moist. Be sure not to overwork the meat.

Line a 4x6-inch baking pan with parchment paper. Fill the pan with the meatloaf mixture.

Gently pack in the meatloaf mixture. Bake the meatloaf for 25-35 minutes.

Remove the meatloaf from the oven and let cool slightly before serving. Top with bbq sauce, tomato sauce or gravy. Enjoy!
