Prepare the tofu soup. In a blender, combine ½ of a Granny Smith apple, ½ of a Persian cucumber, avocado, silken tofu, stem ends of the cilantro, the white parts of the spring onions, lime juice and zest, 2 tablespoons soy sauce, 2 teaspoons fish sauce and water.
Blend until the soup is smooth. You may need to add more water to reach your desired consistency. Taste and season with salt.
Prepare the cucumber and apple relish. Dice the remaining half of the Granny Smith apple and Persian cucumber.
In a bowl, place the diced apple and cucumber, 2 tablespoons soy sauce, 2 teaspoons fish sauce and chopped cilantro leaves. Taste and season with salt.
Plate the soup by placing some relish on one side of the serving bowl.
Pour soup around the relish and serve. Enjoy!
